1 can Biona Organic Chick peas
1 avocado, chopped
1 cucumber, chopped
1 small bunch parsley, chopped
Biona Organic Feta Cheese
1 small shallot (or one lobe of a large), peeled, cored and quartered.
1/3 cup Biona Organic Extra-Virgin Olive Oil
1/4 cup Biona Organic Apple Cider Vinegar
2 tablespoons Dijon mustard
2 teaspoons honey
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
- Drain and rinse chickpeas
- Place in a mixing bowl with all other ingredients and drizzle with dressing. Stir and add more dressing to taste.
- Transfer to serving bowl and enjoy.
