Courgette and cashew cheese canapés

INGREDIENTS

2 courgettes, ends trimmed
Approx. ½ a pot of Raw Health superseed spread
Approx. 100g soft, spreadable cashew cheese
Cress, for garnishing

METHOD

Holding the courgette with one hand vertically, use a vegetable peeler to peel lengthways to create ribbons. Lie these on kitchen paper for a few minutes to absorb some of the excess moisture.

Use a teaspoon to spread a thin layer of super seed spread along the length of each strip of courgette, leaving about ½ -1 inch at one end bare.
Follow by doing the same with the cashew cheese.

Starting from one end, roll a slice of courgette up, securing it in place by pushing a cocktail stick through the sides (see picture). Do the same with the rest of the slices.

Garnish with cress and serve immediately.
