Raw Health beetroot, pear and hazelnut salad

INGREDIENTS

For the dressing:

100ml Raw Health olive oil
35ml Raw Health apple cider vinegar
¼ of a lemon
1 tbsp.  Raw Health honey
A pinch of salt, or to taste

For the salad:

3 beetroot
3 pears
Juice of ½ a lemon
1 bag of lambs lettuce
3 handfuls hazelnuts, halved
A few mint leaves

To serve:

Deeply Dense raw pitta bread

METHOD

Put all of the dressing ingredients into a jar and shake well. Set aside until ready to use.

Trim and scrub the beetroot and peel and core the pears. Chop them both into matchsticks (a mandolin is very handy here!). Squeeze lemon over the pear to stop it going brown. Toss the beetroot and pear together.

To assemble, place a handful of lambs lettuce on a plate, top with the beetroot/ pear mixture. Sprinkle over the some hazelnuts and a few mint leaves. Pour over some of the dressing and season with salt and pepper, if desired. Serve with our Deeply Dense raw pitta bread.
