This ice lolly is the perfect light refresher for those hot summer days! It's dairy free and vegan too!

 

2 cups (480ml) coconut water

juice of 2-3 lemons

2 teaspoons of agave nectar (or more for sweeter lollies)

pinch of salt (optional)

 

Mix together the coconut water, lemon juice, and agave nectar in a bowl. If you are using the pinch of salt, add this now and stir to dissolve.

Pour into ice lolly moulds and freeze until solid, approximately 4 hours depending on the size of the lolly.  

To unmould the lolly, simply run warm water over the moulds and pull out ice lolly. Enjoy!
