1 cup organic Biona White Pudding Rice
2 1/2 - 3 cups water
1 tsp. salt
1 1/2 cup organic Biona Coconut Milk
1/3 cup organic Biona Agave Syrup Light
1/4 cup raisins
1 tsp. cinnamon
1/2 tsp. vanilla extract
First, add the rice, water, salt and raisins to a pan.
Cover with lid, reduce heat to low.
Simmer rice for additional 20-30 minutes until liquid is absorbed, stir regularly.
Turn heat to medium and add all the coconut milk stirring constantly until it has been sufficiently absorbed. Uncover lid so that steam can cook off the rice.
Next fold in vanilla extract, cinnamon and agave syrup.
Cover with lid and allow just to sit for ten minutes.
Serve warm or cold with some fresh mango.
