1 cup water
1/2 cup rice
2 Organic Red peppers-cut lenghtwise and remove seeds
1 tablespoon Biona Organic EX. Virgin Olive oil
2 red onions finely diced
1/2 each teaspoon basil,oregano,thyme
1 teaspoon sea salt
1 pinch ground black pepper
1 diced tomato
1/2 cup Biona Organic Feta cheese - crumbled
Preheat oven to 200 degrees C
lightly grease a baking sheet
In a medium sized saucepan -bring water to the boil,
add rice. Cover,reduce heat and simmer for 20mins-remove from heat.
Place pepper halves cut-side down on the baking sheet and
roast for 25mins until tender.
While peppers are roasting,heat oil in a medium pan on medium heat.
Sautee onion,herbs for 2 mins. Add tomato and simmer 5 mins.
Add salt & pepper,then cooked rice and stir.
Remove from heat and stir in the Feta.
Spoon the mixture into the pepper halves and return to the oven for
a further 5 minutes.
Serve with salad
