Raw courgette and tahini dip

INGREDIENTS

3 medium courgettes, trimmed
60g Raw Health tahini
20ml Raw Health extra virgin olive oil
Juice of 1 small lemon
2 small cloves garlic
1-2 tsp ground cumin
1-2 tsp sea salt, or to taste

METHOD

Blend all ingredients in a high-speed blender until smooth.

Taste for spice and seasoning, adding more if necessary.

Store in the fridge.

Serve as a dip with crudités, vegetable crisps and our raw crackers and crispbreads or use as a thick dressing for salads.
