Raw Health apple crumble

MAKES

10-12 mini crumbles

INGREDIENTS

For the crumble topping:

120g almonds
120g walnuts
200g dates
Pinch of salt
1 tsp cinnamon

For the apple filling:

3 large eating apples, chopped roughly into small pieces
Juice of ½ a lemon

For the apple sauce:

2 eating apples
100g dates
Juice of 1 small lemon
50g Raw Health pure blossom honey or with cinnamon

METHOD

Place all of the crumble ingredient into a food processor and blend until you have a crumbly mixture. Set aside for later.

Squeeze the lemon juice over the chopped apples and set aside.

Blend all of the ingredients for the apple sauce in a high-speed blender until completely smooth. Pour the sauce over the chopped apple and stir to combine.

Spoon the apple mixture into ramekins and then top with the crumble. Serve immediately with a dollop of coconut yoghurt, if desired.
