Raw Health energy ball Christmas puddings

INGREDIENTS

100g Raw Health coconut oil
80g cashew nuts
4 tbsp. Raw Health honey
1 tsp. vanilla extract
3 tbsp. nut milk of choice
36 Raw Health hemp energy balls
36 goji berries, sliced into three
72 pumpkin seeds

METHOD

Blend the coconut oil, cashews, honey, vanilla and milk in a high-speed blender until completely smooth. Empty into a bowl.

Slice a small amount off each energy ball to create a flat surface so that they stand comfortably.

Spoon about ½ - 1 teaspoon of the coconut mixture onto the top of each energy ball, letting it drip down the sides to create a ripple effect.

Lightly roll the pieces of goji berries between your fingers to make them into round balls. Place three on top of each energy ball to create the berries of the holly.
Follow with two pumpkin seeds to create the leaves of the holly.

Put them in the fridge to allow the white part to set completely. Store in the fridge.
